Activated Buckini Protein Oatmeal


  • 1/4 cup Activated Buckini
  • 1/4 cup unsweetened Almond Milk (or plant-based milk of choice)
  • 2 heaped tsp Pea Protein
  • 1 tsp Psyllium Husk
  • 1/4 cup unsweetened Almond Milk (or plant-based milk of choice)
  • 1 Banana
  • Cinnamon to taste


  1. Heat 3/4 cup of water until boiling, once boiling add in 3/4 cup of buckini’s, stir and reduce to a simmer.
  2. Let buckini’s soak for about 20 mins.
  3. While Buckini’s are cooking, in a microwave-safe bowl whisk 1/4 cup of unsweetened almond milk & 2 heaped tsp of pea protein powder (I used strawberry flavour) until smooth. Then combine 1 tbsp of psyllium husk and whisk until combined.
  4. Slice 1/2 your banana into little rectangle pieces.
  5. Once your buckini’s are soft and cooked (soaked up all the water) add them to the bowl along with another 1/4 cup of unsweetened almond milk and stir till combined.
  6. Add the sliced banana 1/2 in with you buckini’s and protein milk then stir till combined.
  7. Once combined, microwave for 1 minute.
  8. Slice leftover 1/2 banana then add to the top of buckini’s along with cinnamon.

Serve 😊. You can add a little more milk to make it more creamy when serving.

Serves 1.

You can cook your buckini’s however you like, then just add my protein mixture to it along with more plant-based milk to make it protein-packed.
