Avocado Pasta Salad

Makes 5 servings
Ingredients:
- 500g of Pasta (Gluten-free)
- 1 cup frozen baby peas
- 1 cup corn kernels
- 1 avocado sliced
- 2 cups sliced cherry tomatoes
Sauce:
- 2 avocados
- 1 handful of spinach leaves
- 1 tsp minecd garlic
- Italian herbs
- Salt
- Lime
- 125ml almond milk
Method:
- In a large pot bring water to a boil then add 500g of pasta.
- About 4 mins before pasta is finished add in corn and peas, once pasta is cooked drain and place in a large mixing bowl.
- In a food processor blend sauce ingredients; spinach, 2 avocados, soy milk, Italian herbs, garlic, salt and 1/2 of a limes juice until smooth.
- Once sauce is creamy add it to the pasta with additional sliced avocado and sliced cherry tomatoes.
- Stir until combined.
- Serve 😊
