Sweet Lemon Loaf

  • Food Processor


  • 11/2 cups Almond Meal
  • 1/2 cup Stevia
  • 3 Eggs
  • 1 tsp Vanilla Essence
  • 1 Lemon Zest
  • 1/2 Lemon Juice
  • 1 tsp Baking Powder


  • Preheat oven to 180° Celsius (350°f)
  • Line a loaf tin with baking paper
  • In a large mixing bowl (or food processor) combine all ingredients until smooth
  • Pour mixture into prepared loaf tin
  • Top with desired toppings of choice
  • Bake for 17 to 20 minutes
  • Remove from oven
  • Let cool before slicing

  • Poppy Seeds
  • Coconut Flakes
  • Shredded Coconut
  • Chocolate Chips
  • Flaked Almonds



Best eaten fresh
Refrigerate once cool and warm slices in the microwave before serving
Also delicious served with dairy-free yogurt or ice cream
Store in an airtight container in the refrigerator or freeze for up to 2 months
